Hatch Red Chile

As the harvest nears and the green chilies ripen, their skin turns a gorgeous shade of red. These red chilies traditionally dried and crushed into powder, or tied together into ristas, which are hung from New Mexico's traditional adobe homes and buildings. 

Our product is roasted just after the chilies turn red, and are peeled, diced, and naturally preserved in lime juice, garlic, and salt, giving them a sweet, spicy finish.
