New Mexico Red Chile

As Green Chile ripens throughout the harvest, it eventually turns red. Red Chile is traditionally dried and crushed into powder, providing an earthy spicy for culinary use, or strung and tied together into ristras that are hung from the adobe homes and structures of New Mexico. 

Our product is roasted when it turns Red, just as it would be when Green, and subsequently peeled, diced, and all naturally preserved in lime juice, garlic, and salt.
